Special Diets Edition
The 151st edition of the Carnival of the Recipes is up for your dining pleasure. This week, participants were asked to submit recipes for special diets.
Next week’s edition will be hosted by Slow Cooker Recipes with a theme to sweat over: It’s Too Hot to Cook (Crockpot and slow cooker recipes). Recipes can be submitted through Blog Carnival.

Our Carnival hostess, Shawn Lea at Everything and Nothing, offers Mexican Squash Casserole, a recipe to keep handy when your zucchini produces prodigiously.
Low Fat Mac ‘n’ Cheese
1/2 cup fat free milk
1 cup 1% cottage cheese
1/4 cup finely chopped onion
2 TB grated Parmesan cheese
1/4 tsp. salt
Ground black pepper, to taste
3 cups cooked elbow macaroni
1/2 cup shredded reduced fat Cheddar cheese, divided
In a blender, combine the milk, cottage cheese, onion, Parmesan cheese, salt and pepper;
cover and process until smooth. Pour into a bowl; stir in the macaroni and 1/4 cup cheese.
Transfer to a 1 quart baking dish coated with nonstick cooking spray. Sprinkle with remaining
cheese.
Cover and bake in a preheated 350° F., oven for 30 minutes. Uncover; bake 5-10 minutes longer
or until edges are bubbly.
Yield: 4 servings.
Nutrition Information:
3/4 cup = 268 calories, 5 g fat (3 g sat fat), 15 mg cholesterol,
15 mg sodium, 35 g carbs, 2 g fiber, 18 g protein.
Diabetic Exchanges: 2 starch, 2 lean meat.
Low Fat Mac ‘n’ Cheese
Impossible Oktoberfest Pie
1/2 lb. fully cooked bratwurst (about 3), cut into 3/4″ pieces
1-1/3 cups drained sauerkraut (from 14 oz .can)
1 cup (4 oz.) shredded Swiss cheese
3/4 cup Original Bisquick® mix
1/2 cup milk
1/2 cup regular or nonalcoholic beer
2 eggsHeat oven to 400° F. Spray 9″ glass pie plate with cooking spray.
Sprinkle bratwurst, sauerkraut and cheese in pie plate.
In small bowl, stir remaining ingredients until blended. Pour into pie plate.
Bake 30 to 35 minutes or until knife inserted in center comes out clean. Let
stand 5 minutes before serving.
Makes:6 servings.

Carnival of the Recipes Christmas in July – Christmas Recipes Edition.
Cajun Roasted Pork
Cajun Roasted Pork – Serves 6
Ingredients
seasoning mix
2 teaspoons black pepper
1 1/2 teaspoons salt
1 teaspoon white pepper
1 teaspoon cayenne
1 teaspoon paprika — sweet
1 teaspoon thyme
1/2 teaspoon dry mustard
3 tablespoons butter — unsalted
1 tablespoon chicken fat (preferred) — or vegetable oil
1/2 cup onion — finely chopped
1/2 cup celery — finely chopped
1/2 cup green bell pepper — finely chopped
1 tablespoon garlic — minced
4 pounds boneless pork loin roast
Instructions
Thoroughly combine the seasoning mix ingredients. Place all the
ingredients except the roast in a large skillet. Saute about 4
minutes over high heat, stirring occasionally. Cool.
Meanwhile, place the roast in a baking pan, fat side up. Make several
deep slits in the meat with a knife, to form pockets, being careful
not to cut through to the bottom. Stuff the pockets with some of the
vegetable mixture, then thoroughly rub vegetable mixture over the
entire roast by hand. If any of the mixture is left, spread it evenly
over the top and little on the sides of the roast.
Bake uncovered at 275F for 3 hours, then at 425F until dark brown
on top and meat is white in the center, 10 to 15 minutes more.

Slow Cooker Recipes contributed a delicious Honey BBQ Pork Slow Cooker Recipe dish.
Chicken Recipes provided an interesting recipe for Next Day Left Over Fried Chicken BBQ and there was a BBQ Chicken Crock Style recipe from Chicken Recipes
Famous recipes offered simple BBQ sauce and Texas BBQ Beef & Beans are on the menu over at World Famous Recipes
Christmas Recipes offered up Barbequed Meatballs.

Texas BBQ Beef and Beans
1 1/2 cups finely chopped onion
1 {8 oz.} can tomato sauce
1/2 cup mild or medium picante sauce
2 Tbs. cider vinegar
1 1/2 Tbs. brown sugar
1 Tbs. chili powder
2 tsp. Worcestershire sauce
1/4 tsp. black pepper
1 lb. beef, trimmed of fat and cut into narrow strips
2 garlic cloves, minced
3 {16 oz.} cans kidney beans, rinsed and drained
In slow cooker/Crock Pot, stir together onion, tomato sauce, picante sauce,
vinegar, brown sugar, chili powder, Worcestershire sauce, and pepper. Stir in
beef, garlic, and beans. Cover and cook on HIGH setting for 1 hour. Turn
setting to LOW and cook for 5 to 6 hours.

Famous Recipes – Zucchini Kabobs
Zucchini & Chicken Kabobs
1/3 cup bottled balsamic vinaigrette
2 Tbsp spicy brown mustard
4 skinned, boned chicken-breast halves, trimmed of visible fat, each cut
in half lengthwise, then crosswise in
1 1/4-in.-wide pieces
1 each yellow squash and zucchini (about 6 oz each), halved lengthwise,
then cut diagonally in 1/2-in.-wide pieces
Eight 10- to 12-in. skewers
1. Whisk vinaigrette and mustard in a medium bowl until blended. Remove
2 Tbsp and set aside. Add chicken and both squashes to bowl; toss to
coat.
2. Heat barbecue grill. While grill heats, alternately thread chicken
and squashes on skewers, leaving small spaces between food. Discard
dressing in bowl.
3. Grill 4 to 6 in. from heat source 12 to 13 minutes, turning once,
until chicken is cooked through and squashes are crisp- tender. Drizzle
or brush with reserved 2 Tbsp dressing. Serves 4.
Baked Sweet Potatoes in the Crockpot
5 medium sweet potatoes or yams
Wash potatoes. Drain but do NOT dry. Set in the
crockpot. Cover and cook on low for 4 to 6 hours
(depending on size of potatoes).
