Fresh Corn Chowder

1 sweet onion, chopped
4 slices bacon, diced
6 ears fresh corn
2 quarts whipping cream or half and half
salt and ground black pepper to taste
1 tablespoons chopped fresh thyme (optional)

Remove corn kernels from the ears of corn and set aside cobs. Saute the
bacon, onions, and corn in a medium pot until the bacon is crispy
Add the cream. Heat through over medium low heat. Season with salt and
pepper. Serve.

Baked Chicken and Mushroom Casserole

1/4 c. butter
Chicken(8 pieces)
1/4 c. flour
1/8 tsp. pepper
1/2 tsp. salt
1 can cream of mushroom soup
1 c. cheddar cheese
2/3 c. evaporated milk
1 cup mushrooms
1/4 c. sour cream

Preheat oven to 425º. Melt butter in pan. Coat chicken with flour. Place skin
side down in butter pan. Bake, uncovered, for 30 minutes. Turn pieces; bake 12
to 15 minutes longer, or until well browned. Remove and reduce heat to 325º.
Combine rest of ingredients and pour over chicken. Cover pan with foil. Bake 20
minutes longer or until sauce is bubbly.

Mardi Gras Pasta Salad

2 Tbs (30 ml) butter
1 cup (250 ml) whole kernel corn, preferably fresh
1 lb (450 g) pasta of your choice, cooked according
to package directions and drained
1 cup (250 ml) finely chopped purple cabbage
4-6 scallions (spring onions), green and white parts,
chopped
3/4 cup (180 ml) mayonnaise
1 Tbs (15 ml) Dijon mustard
2 Tbs (30 ml) chopped fresh basil
Salt and freshly ground pepper to taste

Heat the butter in a small skillet over moderate heat and saute the
corn until tender, 2 to 3 minutes. Combine the corn, cooked pasta,
and remaining ingredients in a large mixing bowl and toss to
thoroughly combine. Serve chilled or at room temperature. Serves
6 to 8.

Roquefort or blue cheese salad dressing

1/4 pound Roquefort or blue cheese
1/2 cup mayonnaise( if its homeamde, better)
1/2 cup cream
1/2 cup sour cream
2 Tbs lemon juice
1 tsp grated onion
2 Tbs chopped parsley
1 tsp Worcestershire sauce
1/4 tsp garlic salt
1/4 tsp black pepper
1 tsp salt

Mash cheese in a mixing bowl. Add all other ingredients and mix well.
Yields 2 cups Keep refrigerated.

Five Pepper Soup

2 tablespoons butter
1 onion — chopped
1/2 red bell pepper — julienned
1/2 green bell pepper — julienned
1/2 yellow bell pepper — julienned
2 jalapeno peppers — seed and chop
3 chile peppers — seed and chop
2 cups whole milk
10 ounces condensed chicken stock
1 can whole kernel corn — (8 3/4 oz.)
1 cup Monterey Jack cheese — shredded
2 dozen smoked oysters
1 tablespoon minced garlic
Red pepper — to taste
Black pepper — to taste
Oregano — to taste
Thyme — to taste
2 cups cherry tomatoes — halved
10 sprigs parsley

Melt butter. Lightly sauté onion and peppers. Add milk, chicken stock and corn.
Cook 10 to 15 minutes at medium heat. Add Monterey Jack cheese. Melt. Add smoked
oysters and garlic; add red pepper, black pepper, oregano, and thyme to taste.
Cook 10 to 15 minutes more. When serving, add cherry tomatoes, and garnish with
parsley.

Easy Beef & Pasta

1 lb boneless sirloin steak
1 tbsp vegetable oil
1 can tomato soup
1/2 cup water
1 bag frozen veggie pasta blend

Slice beef in very thin strips. Heat oil in skillet. Add beef and cook
until browned, stirring often. Add soup, water and veggie pasta blend.
Heat to a boil. Cover and cook over low heat 5 minutes or until done.

Southern Cornbread Turkey Pot Pie

1 can cream of chicken soup
2 cups cubed cooked turkey
1 can (8 oz) whole kernel corn, drained
1 can refrigerated cornbread twists

Preheat oven to 425 º Mix soup, turkey and corn in saucepan and heat
through. Pour into 9″ pie plate. Separate cornbread into 8 pieces along
perforations. Top hot turkey mixture. Bake 15 minutes or until cornbread
is done.

Italian Pork Chops Mozzarella

8 boneless pork chops
1 pkg Shake N Bake
1 1/2 cup spaghetti sauce
1 cup shredded mozzarella cheese

Coat chops with coating mix as directed on package. Discard any remaining
mix. Place chops in 15 x 10″ baking pan. Bake at 425 degrees F for 15
minutes or until cooked through. Top chops with spaghetti sauce and cheese.
Bake an additional 10 minutes or until sauce is warm and cheese is melted.

Bean Salad

1 16 oz can green beans
1 16 oz can wax beans
1 16 oz can kidney beans
1 medium-sized green pepper, sliced and chopped
1 medium-sized onion, sliced and cut up
1/2 c vegetable oil
1/2 c cider vinegar
3/4 c sugar
1 1/2 tsp salt
1/2 pepper

Drain and rinse the kidney beans well. Drain additonal beans and combine
all ingredients together. Marinate and refrigerate overnight.

Sloppy Joe Pizza

3/4 lb ground beef
1 can tomato soup
1 Italian bread shell
1 1/2 cup shredded Cheddar cheese

Preheat oven to 450º Cook beef in skillet until browned; drain. Add soup
and heat through. Spread beef mixture over bread shell to within 1/4″ of
edge. Top with cheese. Bake 12 minutes or until cheese melts.
