Famous Recipes – 8-Grain Bread
LARGE 1 1/2 lb LOAF
1 package active dry yeast
1 1/2 cups bread flour
1 1/2 cups 8-grain flour
1 tablespoon sugar
1/8 cup corn oil
1 teaspoon salt
3/4 cup warm milk
1/4 cup warm water

Add all ingredients to machine in order recommended by machine
manufacturer. Select “whole wheat” bread setting; crust color light.

Slow Cooker Cheesy Pork And Potatoes

  • 1/2 pound ground pork — cooked, crumbled
  • 1/2 cup finely-crushed saltine crackers
  • 1 1/3 cup barbecue sauce
  • 1 egg
  • 3 tablespoons margarine
  • 1 tablespoon vegetable oil
  • 4 potatoes — peeled, sliced thin
  • 1 cup grated mozzarella cheese
  • 2/3 cup evaporated milk
  • 1 teaspoon salt
  • 1/4 teaspoon paprika
  • 1/8 teaspoon freshly-ground black pepper
  • Chopped fresh parsley

Directions:
Combine pork, crackers, barbecue sauce and egg in large bowl; shape mixture into 6 patties. Heat margarine and oil in medium skillet. Saute potatoes and onion until lightly browned. Drain and place in slow cooker.

Combine cheese, milk, salt, paprika and pepper in small bowl. Pour into slow cooker. Layer pork patties on top. Cover and cook on LOW 3 to 5 hours. Garnish with parsley.

 Chicken Recipes * Spicy Fried Chicken Giblets

Chicken Liver 1 lb
Onion finely sliced – 1 cup
Garlic finely chopped – 1 clove
Capsicum (red chili pepper) finely sliced – 1/2 cup
2-3 Green chili Peppers chopped
Oyster Sauce – 2 tbsp
Light Soya Sauce – 2 tbsp
Dark Soya Sauce – 2 tbsp
Vinegar – 1 tbsp
Lime juice – 1 tsp
Sugar – 1 tsp
Oil – 3 tbsp

Wash & clean the giblets thoroughly.
Add 2 tbsp oyster sauce, mix it well & leave it for half an hour.
Heat oil in a pan, add onions, garlic, capsicum & green chili
peppers and fry till the onions are golden brown.
Add both the dark & light soya sauce and vinegar and stir well for a
minute.
Add the giblets to it and sprinkle 1 tsp of sugar over it.
Stir well and add 2 cups of water.
Cook under low heat until the water completely dries up.
Spread the lime juice all over it.

1 lg 12″ Boboli shell or
4 sm 6″ Boboli shells
5 oz Pk Boboli pizza sauce for large; or
1 1/4 oz Sauce pk for each small 6″
2 oz Provolone cheese; shredded
2 oz Pepperoni
1 oz Canadian bacon
1 oz Hard salami; diced
2 oz Mozzarella; shredded
2 oz Black olives; sliced

Layer ingredients on top of shell in order given.
Bake at 450~ for 12-15 minutes (5-8 minutes for 6″)

   6      ounces        Shortcrust pastry
                        Chicken — about 4 lb*
                        Slices ham steak
                        Large leeks — cleaned/chopped
                        Med. onion
                        Salt and pepper
   1      pinch         Ground mace or nutmeg
300      milliliters   Chicken stock
125      milliliters   Double cream
*Jointed, chopped and boned. . Make the pastry and leave it in a cold
place to rest.  Meanwhile prepare the pie. IN a deep 1 – 1 1/2 quart
dish, place layers of the chicken, the ham, leeks and onion or shallot,
adding the mace, nutmeg and seasoning, then repeating the layers until
the dish is full.  Add the stock, then dampen the edges of the dish
before rolling out the pastry to the required size. Place the pastry
over the pie and press the edges down well. Crimp them with a fork. Make
a small hole in the center.  Roll out the scraps of pastry and form a
leaf or rosette for the top.  Place this very lightly over the small
hole. Brush the pastry with milk, and bake at moderate heat, 350F, for
25-30 minutes. Cover the pastry with damp greaseproof paper when
partially cooked if the top seems to be getting too brown. Gently heat
the cream. When pie is cooked, remove from oven. Carefully lift off the
rosette and pour the cream in through the hole. Put back the rosette and
serve. (This pie forms a delicious soft jelly when cold.)

6 tablespoons unsalted butter, softened
2 garlic cloves, minced
1 tablespoon chopped fresh mint
3 teaspoons lemon zest
1/2 teaspoon dried oregano
3/4 teaspoon salt
1/4 teaspoon black pepper
1 whole small chicken (about 2 1/2 pounds), quartered 1 1/3 cups orzo
pasta
1 cup fresh or frozen peas
1. Heat oven to 400 degrees.
In small bowl, stir together 4 tablespoons of the butter, garlic, mint,
1 1/2 teaspoons of the lemon zest, oregano, 1/4 teaspoon of the salt and
1/8 teaspoon of the pepper.
2. With fingers, gently make a pocket between skin and meat on the
breast, thighs and legs. Insert 1 tablespoon butter mixture under skin
of each piece of chicken.
3. Place chicken on broiler pan. Roast in 400 oven for 45 minutes or
until internal temperature of chicken registers 180 on an instant- read
thermometer inserted into the thigh.
4. Meanwhile, prepare orzo as package label directs, adding peas during
the last 3 minutes. Drain; toss with remaining 2 tablespoons butter, 1
1/2 teaspoons lemon zest, 1/2 teaspoon salt and 1/8 teaspoon pepper.
Serve with chicken and salad, if desired.

Quick, Easy -N- Fast Pepper and Onion Smothered Chicken Recipe

6 T. balsamic vinegar
4 skinless, boneless chicken breast halves
3 t. olive oil
2 large onions, halved and thinly sliced
1 C. canned chicken broth
1 T. refined all-purpose flour (such as Wondra)
1 carrot, cut into thin strips
1 red bell pepper cut into thin strips

In a shallow glass or ceramic baking dish, pour vinegar over chicken breasts, turning to coat well. Set aside for 5 minutes.

Meanwhile, in a large skillet over medium heat, warm 2 teaspoons of the oil. Add the onions, cook, stirring occasionally until onions begin to brown.

In a grill pan or skillet, warm the remaining oil over medium-high heat. Drain the chicken and add to the pan, cooking about 5 minutes per side. While chicken cooks, add broth to onions, and cook until most of the liquid has evaporated. Stir in the flour, carrot, bell pepper, remaining 3 tablepoons vinegar, and cook until the pepper and onions are tender and caramelized, about 10 minutes.

Place the chicken on four plates. Spoon vegetables on top of chicken breasts.

Servings: 4.

Famous Recipes – Green Salad with Roasted Chicken

1  (2-1/4 lb.) purchased roasted chicken, chilled   
1 pkg. (5 oz.) mixed spring greens (about 8 cups)   
2 cups fresh sliced strawberries, or blueberries   
1 cup (4 oz.) Gorgonzola or blue cheese, crumbled   
1/2 cup  honey-roasted cashews or peanuts   
1  lemon, halved    
3 TB olive oil  
1/4 tsp. salt   
1/4 tsp. ground black pepper   

1. Remove and discard skin from chicken. Pull meat from bones,
discarding bones. Shred meat (you should have about 3-1/2 cups).
   
2. Place greens on a platter. Top with chicken, strawberries, cheese
and nuts. Drizzle with juice from lemon and oil; sprinkle with salt and pepper.

Makes 6 main-dish servings.

 1 box Devil’s Food Cake Mix (any brand)
 1 (15 oz) can Libby’s 100% pure pumpkin
 
 THAT’S CORRECT…JUST 2 INGREDIENTS
 
 Spray 9×13-inch baking dish with Canola spray.
 Using hand mixer, mix
 the two ingredients until all lumps
 are removed. Batter with be thick. Pour into
 baking dish and spread
 evenly.
 Bake according to directions on cake mix
 package.
 
 Serving: 12
