Famous Recipes – Baked Carrots

BAKED CARROTS

12 large carrots, peeled and sliced

½ cup butter or margarine

½ cup packed brown sugar

½ teaspoon baking powder

2 eggs, beaten

1 cup evaporated milk

salt and pepper to taste

approximately ¼ cup fine bread crumbs

Cook and peel and slice carrots; drain. Add butter or margarine and mash.

Stir in remaining ingredients, except bread crumbs, and beat lightly. Pour into

greased casserole. Sprinkle bread crumbs on top and bake at 350 degrees for 30

minutes.

Serves 8
