World Famous Green Beans & Ham
GREEN BEANS, HAM AND GRUYERE WITH WALNUT-DILL DRESSING
1 1/2 lbs. green beans, trimmed and cut in half
1 cup diced smoked ham (or turkey ham)
1/2 cup or more diced Gruyere cheese
1/2 cup thinly sliced green onions
1/2 red sweet pepper, thinly sliced
1/2 cup olive oil
1/3cup walnut oil
1/3 cup red wine vinegar
1 to 2 tbsp. sugar
1/2 cup fresh dill (do not use dried)
1/4 to 1/2 cup coarsely chopped fresh parsley
1/4 to 1/2 cup coarsely chopped walnuts
1/2 tsp. salt, or more to taste
1/4 tsp. freshly ground black pepper, or more to taste
6 hard-cooked eggs, quartered, for garnish (optional)
Add beans to boiling salted water; reduce heat and simmer until barely
tender. Drain in a colander, rinse with cold water and drain thoroughly
before adding to a large salad bowl. When beans are cool, add ham,
cheese, green onions and red pepper. Cover and refrigerate while preparing dressing.
Add to a food processor or blender the oils, vinegar, dill, parsley,
walnuts, salt and pepper. Process until almost smooth. Taste for
seasoning and adjust.
Add 1/2 cup dressing to salad ingredients and mix to coat. Arrange
quartered eggs around the salad and pass the remaining dressing.
