Valentines Day Breakfast Dish
Ingredients: Breakfast, Cheese/eggs
Filling:
1 1/2 c Finely chopped mushrooms
1/4 c Sliced green onion
1 tb Margarine or butter
1 tb All-purpose flour
Ds pepper
1/4 c Milk
Egg Mixture:
1/2 c All-purpose flour
2 c Milk
2 tb Margarine or butter
1/4 ts Salt
1/4 ts Pepper
1/8 ts Ground nutmeg
4 Eggs, slightly beaten
1 c Shredded cheddar cheese
Preparation :
Filling:
Cook mushrooms and onion in margarine or butter till tender (about 5
minutes). Stir in flour and pepper. Stir in milk all at once. Cook,
stirring over low heat until thickened and bubbly; set aside. Egg
Mixture: Combine flour and milk in medium saucepan. Cook and stir
over medium heat until thickened. Stir in the margarine or butter
till melted. Stir in salt, pepper and nutmeg. Add eggs, and stir
until combined. Stir in 3/4 cup of the cheese. Pour half of the egg
mixture into a lightly greased 12×7-1/2×2-inch baking dish. Spoon
mushroom mixture over egg mixture. Top with the remaining egg
mixture. Bake in 400-degree oven 20 minutes or until a knife inserted
near the center comes out clean. Sprinkle with remaining cheese. Let
stand 5 minutes. If desired, garnish with finely chopped red pepper.
Makes 6 servings

HEART’S DESIRE PIZZA VALENTINE DAY RECIPE

HEART’S DESIRE PIZZA

1 tube (17.3 ounces) large refrigerated biscuits
1 jar (14 ounces) pizza sauce
1-1/2 to 2 cups toppings–sliced ripe olives, sliced and quartered
pepperoni, chopped fresh mushrooms, chopped green and/or sweet yellow pepper
1-1/2 cups (6 ounces) shredded mozzarella cheese
1-1/2 cups (6 ounces) shredded cheddar cheese

Cut eight 6-inch-square pieces of aluminum foil; place on baking sheets. Lightly coat foil with nonstick cooking spray; set aside. On a lightly floured surface, roll each biscuit to a 5-inch square. Cut a 1-inch triangle from center top and place on the center bottom, forming a heart.

Press edges to seal. Transfer to foil squares. Spoon pizza sauce over dough to within 1/4 inch of edges. Sprinkle with desired toppings and cheeses. Bake at 425 degrees for 10-15 minutes or until golden brown. Yield: 8 individual pizzas.

World Famous Salmon (or Tuna) Boats

Salmon (or Tuna) Boats

1 7¾-ounce can salmon, drained and flaked (or tuna)
¼ cup dill pickle, chopped (can substitute relish for sweeter flavor)
¼ cup mayonnaise
2 tablespoons catsup
4 hot dog buns
Soft butter

Heat oven to 350°. Mix first 4 ingredients in a bowl. Open buns and slice down center. Butter each half. Spread salmon (or tuna) filling evenly on buns. Place on cookie sheet and bake for 10 minutes.

SWISS CHICKEN FAMOUS RECIPE

SWISS CHICKEN

6 chicken breast halves, skinless and boneless
1/8 tsp garlic powder
1/8 tsp ground black pepper
6 slices Swiss cheese — 4-inch-square
2 cans (10 3/4 oz ea) condensed cream of chicken or mushroom soup
undiluted
1/4 cup milk
1 box herb-seasoned stuffing mix (Stove Top is good)
1/2 cup butter — melted

Place chicken in a lightly greased 13x 9x 2-inch baking dish; sprinkle
with garlic powder and pepper. Top each breast half with a cheese slice; set aside. (Or slice a block of Swiss cheese and put as much cheese over the chicken as you like.)

Combine soup and milk, stirring until smooth; pour over chicken.
Sprinkle with stuffing mix, and drizzle with butter. Cover and bake at 350* F. for 50 minutes or until chicken is done. Yield: 6 servings.

Famous Quick Mushroom Soup

Quick Mushroom Soup

This incredibly easy recipe is also incredibly versatile. You can
puree the mushrooms for maximum flavor, or you can leave them in
chunks, or you can strain the broth to make a lovely mushroom-
scented consomme.

1 lb (450 g) mushrooms, chopped or sliced
4-6 cups (1-1.5 L) beef, chicken, or vegetable stock
1 cups (250 ml) heavy cream, half-and-half, or milk (optional)
2 Tbs (30 ml) dry sherry (optional)

Combine the mushrooms and stock in a pot and bring to a boil over
high heat. You can puree the soup, serve it like it is, or strain
it to make a clear broth. Add optional cream and/or sherry if
desired. Serves 4 to 6.

CHICKEN SAUSAGE ONION PASTA BAKE

CHICKEN SAUSAGE ONION PASTA BAKE

½ lb. Pasta bow ties – cooked/drained
1 lb. Chicken sausages
3 Onions, coarsely chopped
6 Garlic coves, minced
½ c. White wine
28 oz. Crushed tomatoes
2 T. Basil
1 T. Oregano
2 T. Fennel seeds
½- 1 c. Cottage cheese or ricotta
½ c. Parmesan

Prick sausages; place in pan with 1″ water and 1 T. olive oil;
bring to boil; reduce and let liquid cook away and brown till
crisp or broil till crisp; deglaze pan w/wine. Slice on angle.
Saute onions, garlic; add sausage; herbs, tomatoes & bring to
bubble; cook on low. To drained pasta; add cheeses. Place half
of sausage mixture in oval baking dish; top with pasta and
remaining sausage; cover with Parmesan grated or shaved; place
under broiler till cheese are browned and melted.

VEGETABLE HOT-POT

VEGETABLE HOT-POT
Pressure cooking time: 8 minutes   Yields: 8 servings

Ingredients:
medium carrots, cut into 1/4 inch slices
1 large onion, thinly sliced
1/2 medium green pepper, deseeded and cut  into 1 inch pieces
1 small turnip, peeled and cut into 1/2 inch cubes
2 medium tomatoes, peeled and cut into eighths
1/2 small cauliflower head, cut into flowerettes of about 1 inch
1 small bay leaf
1 teaspoon salt
a pinch of pepper
1/8 teaspoon dried thyme leaves
1/8 teaspoon marjoram leaves
1 1/8 tablespoons Worcestershire sauce (can use vegetarian)
2 tablespoons parsley, chopped
1 1/4 cups water

Put all ingredients except 1 tablespoon parsley in cooker. Stir.
Close cooker. Bring to full pressure on high heat. Reduce heat and cook for 2 minutes.
Remove cooker from heat and let cool.
Open cooker. Discard bay leaf. Place vegetables on serving dish. Keep hot.
Return cooker to high heat and boil till liquid is reduced to half, stirring occasionally. Pour over vegetables. Serve hot, garnish with remaining parsley.

Holiday Lemon-Basil Turkey with Roasted Vegetables

Lemon-Basil Turkey with Roasted Vegetables

Vegetable cooking spray
2 medium lemons
8-lb. turkey breast
1 tbsp. butter OR margarine, melted
24 baby Yukon gold potatoes
1 lb. butternut squash, peeled and cut into 1″ cubes (about 3 cups)
8 medium beets, peeled and cut into 1″ cubes (3 3/4 cups)
12 small white onions, peeled OR 1 cup frozen small whole onions
1 tbsp. dried basil leaves, crushed
1 cup Swanson® Chicken Broth (regular, Natural Goodness™ or Certified
Organic)

SPRAY 17″ x 11″ roasting pan with vegetable cooking spray.
CUT 1 lemon into thin slices.  Squeeze 2 tbsp. juice from remaining
lemon.  Loosen skin on turkey breast and place lemon slices under skin.
Brush turkey with butter.  Place turkey and vegetables in prepared pan.
Sprinkle with basil.  Mix broth and lemon juice.  Pour half of broth
mixture over all.   ROAST at 375°F. for 1 hr.   STIR vegetables.  Add remaining broth mixture to pan.  Roast 30 min. or  until done.  Serves 8.

Famous Turkey Breast & Rice Recipe

Turkey Breast Braised with Garlic and Rice

1 Cup long-grain rice
1 Can (14-1/2 ounces) chicken broth
1/2 Cup white wine
2 Teaspoons dried parsley
1/2 Teaspoon each dried rosemary, thyme and sage
1 Bay leaf
1 BONE-IN TURKEY BREAST (5-6 pounds)
Paprika
3 Cloves garlic

Preheat oven to 350.

In 5-quart Dutch oven combine rice, broth, wine, parsley, rosemary, thyme, sage
and bay leaf. Place turkey over rice mixture and sprinkle turkey generously with
paprika.
Cut off root ends of garlic cloves. Place whole garlic bulbs, cut-end-up, in rice
around turkey breast.
Cover top of Dutch oven with foil and lid.

Bake at 350 degrees F. 2-1/2 to 3 hours or until meat thermometer inserted in thickest
part of breast registers 170-175 degrees F.
Allow to stand 10 to 15 minutes before serving.
To serve, carve turkey into slices and place on platter.
Spoon rice mixture into serving bowl.
Squeeze garlic from skins onto turkey and rice.

Famous Tortellini Soup Recipe

Tortellini Soup

1 tsp butter
3-4 cloves garlic, finely chopped
2 cans (14 oz. each) vegetable broth
1 pkg (9 oz.) tortellini
1 can (14 oz.) stewed tomatoes, chopped up
1/2 bunch fresh spinach, cleaned, stemmed, and torn
6-8 fresh mushrooms, sliced
6 fresh basil leaves or 1 Tbsp. dried basil
1/4 cup shredded parmesan

Saute garlic in butter.  Add broth and bring to boil.  Add tortellini
and simmer for about 5 minutes.  Add tomatoes, spinach, mushrooms, and
basil.  Simmer for 2-3 minutes.  Stir in parmesan and serve.
