Famous Dave’s Legendary Pit Barbecue Ribs

Rib Rub
2 cups packed light brown sugar
1 cup kosher salt
3/4 cup sugar
1/2 cup garlic seasoning
1/4 cup chili powder
1/4 cup lemon pepper
1/4 teaspoon onion salt
1/4 cup celery salt
2 tablespoons coarse ground black pepper
2 tablespoons whole celery seeds
1 teaspoon crushed cloves
1 tablespoon cayenne pepper
1/2 cup Mrs. Dash original blend
1/4 cup salt

2 (4-5 pound) racks spareribs
1/2 cup Italian salad dressing
1/2 teaspoon coarse ground pepper
1/2 cup packed brown sugar
1 cup minced dried onion
1 cup Rib Rub
1 (20 ounce) bottle Famous Dave’s BBQ sauce

Mix all rub ingredients. Store in airtight container. Makes 6 cups

Night before smoking, trim ribs of fat. Place in large plastic bag
and pour in Italian dressing to coat. Remove and wipe dressing off.
Sprinkle each rib with pepper and then 1/4 cup of brown sugar and
1/2 cup onion flakes. Wrap each rib in plastic and refrigerate

The next morning remove from wrap and wipe off ribs. Coat front and
back with rib rub and rub into meat. Using a chimney charcoal
starter get 15 briquettes red hot. Place coals on end of grill and 1
pound of green hickory around coals. Use water-soaked hickory chunks
if you can’t get fresh cut hickory. Keep internal temp of grill at
200 to 255 degrees F. Add more charcoal and hickory chunks every
hour as needed. Place ribs bone side down but not directly over hot
After 3 hours, remove ribs from grill and wrap in aluminum foil.
Hold in covered grill at 180 to 200 degrees F for 1 1/2 to 2 hours
or until fork tender. Build hot bed of coals over entire bottom of
grill. Place ribs on grill to add char flavor. When meat becomes
bubbly it is done. Slather with BBQ sauce. Let heat caramelize sauce
(secret to tender smoky ribs).

Slow Cooker Recipes contributed a delicious Honey BBQ Pork Slow Cooker Recipe dish.

Chicken Recipes provided an interesting recipe for Next Day Left Over Fried Chicken BBQ and there was a BBQ Chicken Crock Style recipe from Chicken Recipes

Famous recipes offered simple BBQ sauce and Texas BBQ Beef & Beans are on the menu over at World Famous Recipes

Christmas Recipes offered up Barbequed Meatballs.

Texas BBQ Beef and Beans

1 1/2 cups finely chopped onion
1 {8 oz.} can tomato sauce
1/2 cup mild or medium picante sauce
2 Tbs. cider vinegar
1 1/2 Tbs. brown sugar
1 Tbs. chili powder
2 tsp. Worcestershire sauce
1/4 tsp. black pepper
1 lb. beef, trimmed of fat and cut into narrow strips
2 garlic cloves, minced
3 {16 oz.} cans kidney beans, rinsed and drained

In slow cooker/Crock Pot, stir together onion, tomato sauce, picante sauce,
vinegar, brown sugar, chili powder, Worcestershire sauce, and pepper. Stir in
beef, garlic, and beans. Cover and cook on HIGH setting for 1 hour. Turn
setting to LOW and cook for 5 to 6 hours.

Famous Recipes – Zucchini Kabobs

Zucchini & Chicken Kabobs

1/3 cup bottled balsamic vinaigrette
2 Tbsp spicy brown mustard
4 skinned, boned chicken-breast halves, trimmed of visible fat, each cut
in half lengthwise, then crosswise in
1 1/4-in.-wide pieces
1 each yellow squash and zucchini (about 6 oz each), halved lengthwise,
then cut diagonally in 1/2-in.-wide pieces
Eight 10- to 12-in. skewers

1. Whisk vinaigrette and mustard in a medium bowl until blended. Remove

Famous Recipes – Margarita Kabobs

1-1/4 pounds fresh or frozen jumbo shrimp in shells and/or 1 pound
skinless, boneless chicken breasts or thighs
1 large red or green sweet pepper, cut into bite-size pieces
1 medium red onion, cut into wedges
1 cup orange marmalade
1/3 cup lime juice
1/4 cup tequila (optional)
2 tablespoons cooking oil
2 tablespoons snipped fresh cilantro
2 cloves garlic, minced
6 1/2-inch-thick slices peeled fresh pineapple

1. Thaw shrimp, if frozen. Peel and devein shrimp, leaving tails intact.
Rinse shrimp and pat dry. Cut chicken, if using, into 1-inch chunks.
Thread shrimp and/or chicken, sweet pepper, and onion onto six 10- to
12-inch skewers.

2. For sauce: In a small saucepan stir together the marmalade, lime
juice, tequila, if you like, cooking oil, cilantro, and garlic. Cook and
stir just until marmalade is melted. Divide mixture in half.

3. Grill kabobs on a greased rack of an uncovered grill directly over
medium coals for 10 to 12 minutes or until shrimp turn pink or chicken
is done, turning once. Add pineapple to grill rack and brush kabobs and
pineapple with 1/2 of the sauce mixture during the last 5 minutes of
grilling. Turn pineapple once during the last 5 minutes of grilling.

4. Pass remaining half of sauce with kabobs and pineapple. Makes 6

Lemon-Garlic Halibut Steaks

Lemon-Garlic Halibut Steaks

vegetable oil for grilling
1/4 cup lemon juice
1 tablespoon olive or vegetable oil
1/4 teaspoon salt
1/4 teaspoon pepper
2 cloves garlic, finely chopped
4 halibut or tuna steaks, about 1 inch thick (about 2 pounds)
1/4 cup chopped fresh parsley
1 tablespoon grated lemon peel

Brush grill rack with vegetable oil. Heat coals or gas grill for
direct heat. In shallow glass or plastic dish or resealable plastic
food-storage bag, mix lemon juice, oil, salt, pepper and garlic. Add
fish; turn several times to coat. Cover dish or seal bag and
refrigerate 10 minutes.
Remove fish from marinade; reserve marinade. Cover and grill fish
over medium heat 10 to 15 minutes, turning once and brushing with
marinade, until fish flakes easily with a fork. Discard any remaining

Makes 4 servings.

2 lbs. lean spare ribs
1 can condensed beef bouillon
1/2 c. water
2 tbsp. maple syrup
2 tbsp. honey
3 tbsp. soy sauce
2 tbsp. barbecue sauce
1/2 tsp. dry mustard

Bake ribs at 350 degrees for 1 hour (1/2 hour per side) or broil for 15 to 20 minutes to remove fat. Cut into single servings. Combine ingredients in crock pot, stir to mix. Add ribs. Cover and cook overnight or on low for 8 hours. Serve over rice.

1 frying chicken cut up or quartered
1 can condensed tomato soup
3/4 cup chopped onion
1/4 cup vinegar
3 Tablespoons brown sugar
1 Tablespoon Worcestershire sauce
1/2 teaspoon salt
1/4 teaspoon sweet basil
1/4 teaspoon thyme

Place chicken in slow cooker. Combine all other ingredients and pour
over chicken. Cover tightly and cook at “low” for 6-8 hours. Makes 4

Texas Barbecue

Texas Barbecue

2 tablespoons butter
1/3 cup chopped onion
1 cup tomato juice
1/2 cup water
1/4 cup catsup
2 tablespoons brown sugar
2 tablespoons vinegar
2 teaspoons Worcestershire Sauce
2 teaspoons prepared mustard
1 teaspoon salt
4 servings frying chicken
1/4 cup fat
6 ounces long spaghetti

Met butter in saucepan. Add onions and cook until very lightly browned. Add tomato juice, water, catsup and seasonings. Simmer for 15 minutes. While barbecue sauce is simmering, dredge chicken with seasoned flour and brown in heavy skillet. While chicken is browning, cook spaghetti in boiling, salted water. Drain and rinse spaghetti. Pour 1 cup barbecue sauce over spaghetti. Mix well.

Pour into greased baking dish. Arrange browned chicken pieces on top. Cover with 1/2 cup sauce. Bake in 350 degree F. oven for 30 minutes. Pour remaining sauce over chicken, return to oven. Bake until chicken is tender, about 40 minutes longer.

1 package tyson skinless drumsticks
1 egg
3 tablespoons bbq sauce
3/4 cup corn flake crumbs or bread crumbs
1/4 cup flour
1/2 teaspoon salt
Ask a grown-up to preheat oven to 375*. Mix together egg and bbq
sauce. Put cornflake/bread crumbs in cereal bowl. In a plastic bag,
combine flour and salt. Shake it good. Add chicken. Close bag and
shake until the chicken is coated with flour. Dip each drumstick in
the egg and then in crumbs to coat. Put the chicken on baking sheet.
Now wash the sticky stuff off your hands. Its the grown-ups turn.
Bake the chicken at 375* for 15-20 minutes. Turn each piece over and
bake 15-20 minutes more or until juices from chicken are clear.
Serve with corn on the cobb and fresh fruit. Rustle up the leftovers
and stick them in the fridge.
