Tamale Pie

2 lbs. lean ground beef
2 med. green and/or red sweet peppers, seeded and chopped (2 cups)
1 med. onion, chopped
1 – 11 oz. can condensed nacho cheese soup
2 – 2 1/4 oz. cans sliced pitted ripe olives, drained (1 cup)
1 – 8 oz. jar mild chunky salsa (3/4 cup)
1/4 cup water
2 – 8 oz. pkgs. corn muffin mix
3/4 cup shredded Cojack or Colby cheese
Cherry tomatoes, quartered, optional
Whole pitted ripe olives, optional
In a 12 inch skillet, cook ground beef, peppers, and onion until meat is
brown. Drain off fat. Stir in soup, sliced olives, salsa, and water. Bring
to boiling; reduce heat. Simmer, uncovered, for 5 minutes. Remove from
heat.

Meanwhile, prepare corn muffin mix according to package directions. Spread
half of the muffin batter into a greased 13 x 9 x 2 inch baking dish. Spoon
the hot meat mixture over the meat mixture. Bake in a 350 degree oven for 30
to 35 minutes or until muffin layer is golden. Top with cheese. If desired,
garnish with tomatoes and whole olives. Cut into squares.

Easy Beef & Pasta

1 lb boneless sirloin steak
1 tbsp vegetable oil
1 can tomato soup
1/2 cup water
1 bag frozen veggie pasta blend

Slice beef in very thin strips. Heat oil in skillet. Add beef and cook
until browned, stirring often. Add soup, water and veggie pasta blend.
Heat to a boil. Cover and cook over low heat 5 minutes or until done.

Sloppy Joe Pizza

3/4 lb ground beef
1 can tomato soup
1 Italian bread shell
1 1/2 cup shredded Cheddar cheese

Preheat oven to 450º Cook beef in skillet until browned; drain. Add soup
and heat through. Spread beef mixture over bread shell to within 1/4″ of
edge. Top with cheese. Bake 12 minutes or until cheese melts.

Goulash Soup

2 lbs. stew meat cut in 1″ cubes
2 large onion chopped
2 clove garlic minced
2 tablespoons Worcestershire sauce
1 tablespoon brown sugar
2 teaspoons salt
3 Tablespoons Sweet Hungarian paprika (not Spanish)
1 teaspoon dry mustard
1 teaspoon horseradish
5 cups beef broth
1 pkg. egg noodles
1/2 pt. sour cream

Heat heavy pan with a little olive oil. When it is hot drop meat cubes
in one at a time so they sear and the heat of the pan doesn’t go down
all at once. You want the meat to sear and not release any of it’s
juices until it is cooking. Brown all sides of meat then remove from pan.

Reduce heat and add onions,garlic, and saute til tender. Add
Worcestershire sauce, sugar, salt, paprika, horseradish and mustard
and add meat.

Add the broth and cover and simmer for 2 to 3 hours til meat falls
apart. Don’t hurry this process, it is better the longer it cooks.

When the meat is done and falling apart, take meat out and shred it.
Replace the meat and add noodles. Cook til noodles are done. If you
need more broth then add more beef broth and heat through.

Take off heat and stir in sour cream.

EASY STIR FRY

EASY STIR FRY
1/2 lb. lean beef, cut into strips
1 sm. onion, chopped
1 green pepper, sliced
1 c. celery, sliced
1 c. cut green beans
4 tsp. cornstarch
1 tbsp. soy sauce
3/4 c. water
1 (4 oz.) can sliced mushrooms

Brown beef in 2 tablespoons oil.Add onion, pepper,celery,and green beans
Cook 3-5 mins.Combine cornstarch and water and soy sauce.Add to skillet
stirring until liquid is clear 10 mins,stirring until liquid is clear and shiny and beans are tender.Garnish with pimento. Serve with rice.

Chili

Prep & Cooking Time:  2 hr. 0 min.Yield: 6 servingsServing Size: 1.000 cup  1 bay leaf 3 Tbsp chili powder 1 tsp cumin seed 1/4 tsp garlic powder 3/4 tsp dry mustard  1/2 tsp oregano 1 tsp fresh black pepper to taste 1 tsp white vinegar 2 Tbsp lemon juice 4 Tbsp chopped celery 1 cup chopped onions 2 8-ounce cans whole tomatoes, no added salt  1-1/2 cup water 2 (15-ounce) cans kidney beans, rinsed and drained, one light, one dark 1-1/2 pound extra-lean ground beef 2 tsp Worcestershire sauce    Directions: In a large pan saute onions over medium-high heat until tender, about 3 minutes. Add ground beef and cook, stirring occasionally until meat is no longer pink. Remove from heat and drain the excess fat by pouring the meat into a colander. Return drained meat and onions to pan and add all remaining ingredients. Bring to a simmer and cook for one and a half hour. Remove bay leaf and serve. Slow Cooker Recipes

2 Tbsp red wine vinegar
1/2 cup canola oil
2 cloves garlic, minced
2 Tbsp chopped scallions
1-1/2 pounds flank steak, trimmed of all visible fat
4 Tbsp low-sodium soy sauce
4 Tbsp honey
 

Directions:

Combine all ingredients in a baking dish and mix thoroughly. Marinate steak for eight hours in the refrigerator. Preheat broiler. Place meat in broiling pan and broil 4 to 6 inches (10.6 to 15.2 cm) from heat for 5 minutes on each side. Remove from heat and let stand for 5 minutes. Slice thinly across the grain and serve.

Famous Dave’s Legendary Pit Barbecue Ribs

Rib Rub
2 cups packed light brown sugar
1 cup kosher salt
3/4 cup sugar
1/2 cup garlic seasoning
1/4 cup chili powder
1/4 cup lemon pepper
1/4 teaspoon onion salt
1/4 cup celery salt
2 tablespoons coarse ground black pepper
2 tablespoons whole celery seeds
1 teaspoon crushed cloves
1 tablespoon cayenne pepper
1/2 cup Mrs. Dash original blend
1/4 cup salt

Ribs
2 (4-5 pound) racks spareribs
1/2 cup Italian salad dressing
1/2 teaspoon coarse ground pepper
1/2 cup packed brown sugar
1 cup minced dried onion
1 cup Rib Rub
1 (20 ounce) bottle Famous Dave’s BBQ sauce

Mix all rub ingredients. Store in airtight container. Makes 6 cups

Night before smoking, trim ribs of fat. Place in large plastic bag
and pour in Italian dressing to coat. Remove and wipe dressing off.
Sprinkle each rib with pepper and then 1/4 cup of brown sugar and
1/2 cup onion flakes. Wrap each rib in plastic and refrigerate
overnight.

The next morning remove from wrap and wipe off ribs. Coat front and
back with rib rub and rub into meat. Using a chimney charcoal
starter get 15 briquettes red hot. Place coals on end of grill and 1
pound of green hickory around coals. Use water-soaked hickory chunks
if you can’t get fresh cut hickory. Keep internal temp of grill at
200 to 255 degrees F. Add more charcoal and hickory chunks every
hour as needed. Place ribs bone side down but not directly over hot
coals.
After 3 hours, remove ribs from grill and wrap in aluminum foil.
Hold in covered grill at 180 to 200 degrees F for 1 1/2 to 2 hours
or until fork tender. Build hot bed of coals over entire bottom of
grill. Place ribs on grill to add char flavor. When meat becomes
bubbly it is done. Slather with BBQ sauce. Let heat caramelize sauce
(secret to tender smoky ribs).
