Famous Turkey Breast & Rice Recipe

Turkey Breast Braised with Garlic and Rice

1 Cup long-grain rice
1 Can (14-1/2 ounces) chicken broth
1/2 Cup white wine
2 Teaspoons dried parsley
1/2 Teaspoon each dried rosemary, thyme and sage
1 Bay leaf
1 BONE-IN TURKEY BREAST (5-6 pounds)
Paprika
3 Cloves garlic

Preheat oven to 350.

In 5-quart Dutch oven combine rice, broth, wine, parsley, rosemary, thyme, sage
and bay leaf. Place turkey over rice mixture and sprinkle turkey generously with
paprika.
Cut off root ends of garlic cloves. Place whole garlic bulbs, cut-end-up, in rice
around turkey breast.
Cover top of Dutch oven with foil and lid.

Bake at 350 degrees F. 2-1/2 to 3 hours or until meat thermometer inserted in thickest
part of breast registers 170-175 degrees F.
Allow to stand 10 to 15 minutes before serving.
To serve, carve turkey into slices and place on platter.
Spoon rice mixture into serving bowl.
Squeeze garlic from skins onto turkey and rice.

2 whole chicken breasts, boned
1 can cream of chicken soup
1/4 c. dry sherry
2 T. butter or margarine
2 green onions with tops, finely chopped
1 tsp. curry powder
1/4 tsp. salt
Dash of pepper
Fluffy rice

Cut chicken into small pieces, place in crock pot. Add all remaining ingredients except rice. Cover and cook on high setting 2 1/2 to 4 hours. Serve over hot rice.

Lemon-Asparagus Chicken with Dill

Lemon-Asparagus Chicken with Dill

Makes 2 (1-1/2 cup) servings

1/2 cup uncooked rice
1 tsp chicken bouillon granules
1/2 cup water
1 cup asparagus, cut in 2-inch pieces
Nonstick cooking spray
6 ozs boneless skinless chicken breasts, cut in bite-size pieces
1 tbsp lemon juice
2 tsps olive oil
1-1/2 tsps dried dill weed
1/8 tsp salt
2 tbsps finely chopped parsley

Prepare rice according to package directions, adding bouillon granules to water.

Meanwhile, place 1/2 cup water in 12-inch nonstick skillet; bring to a boil.

Add asparagus; return to a boil; reduce heat and simmer, covered, 3 minutes or until crisp-tender. Drain; set aside. Wipe out skillet with paper towel.

Coat same skillet with cooking spray. Heat over medium-high heat until hot.

Add chicken; cook and stir 3 minutes or until no longer pink. Remove from heat; add asparagus.

Cover and keep warm.

Combine lemon juice, oil, dill and salt in small bowl.

Add rice, lemon juice mixture and parsley to chicken mixture; stir until blended.

Exchanges: 1-1/2 starch; 1 vegetable; 3 meat

1/4 cup each butter or margarine, cream
1 small onion diced
4 oz. canned mushroom
2 cups each chicken broth, cooked chicken
1 cup uncooked rice
1 small diced sweet pepper
1/2 cup each diced celery, slivered carrots
Directions
Melt butter in skillet. Cook onion until tender. Add broth,
heat until it boils. Add remaining ingredients after 15 – 20 minutes.
Suggestion: serve with pineapples.

BASIL RICE SALAD

BASIL RICE SALAD
Yield: 6 servings (1/2 cup rice, 1/2 cup vegetables and beans)

INGREDIENTS

– 3 cups cooked rice
– 1/2 cup diced carrots
– 2 medium tomatoes, diced
– 1 cup canned kidney beans, drained
– 2 green onions, minced

Dressing:

– 2 tablespoons lemon juice
– 2 tablespoons red wine vinegar
– 1/4 cup olive oil
– 1/4 cup minced basil
– 2 tablespoons minced Italian parsley
– 2 teaspoons sugar
– Fresh ground pepper and salt to taste

DIRECTIONS

Combine the salad ingredients in a large bowl.

In a separate bowl, whisk together the dressing ingredients.

Add dressing to salad and toss well. Chill for 1-2 hours.
Serve cold.

2 lbs. lean spare ribs
1 can condensed beef bouillon
1/2 c. water
2 tbsp. maple syrup
2 tbsp. honey
3 tbsp. soy sauce
2 tbsp. barbecue sauce
1/2 tsp. dry mustard

Bake ribs at 350 degrees for 1 hour (1/2 hour per side) or broil for 15 to 20 minutes to remove fat. Cut into single servings. Combine ingredients in crock pot, stir to mix. Add ribs. Cover and cook overnight or on low for 8 hours. Serve over rice.

Spanish Chicken and Rice Casserole

A traditional baked casserole with a healthful proportion of vegetables,
Ingredients:

1 box (6 oz.) quick-cooking brown rice (1 2/3 cups)
1 small onion, chopped
1 Tbsp. extra virgin olive oil
1 can (14.5 oz.) stewed tomatoes
1 can (14.5 oz.) fat-free, reduced sodium chicken or vegetable broth
1 tsp. paprika
1/2 tsp. dried oregano
1/2 tsp. freshly ground black pepper
1 jar (7 oz.) roasted red peppers, drained and chopped
1 large, skinless, boneless chicken breast (about 3/4 lb.), cut into 1-inch
pieces
1 bay leaf
1/2 cup frozen green peas
Salt, to taste (optional)
Instructions:
Preheat oven to 375 degrees.

In a 2-quart casserole dish, combine rice, onion and oil. Add tomatoes,
broth, paprika, oregano, ground pepper, roasted peppers, chicken and bay leaf.
Stir, then cover and bake casserole for 25 minutes.

Stir in peas and continue to bake, uncovered, for an additional 25 minutes or
until broth is absorbed. Remove bay leaf and serve.

One Pot Chicken with Rice

1 can clear chicken broth
1 can (chicken broth can) water
1 can frozen or canned whole kernal corn
1 can (chicken broth can) diced chicken
1 can (chicken broth can) long grain white rice
Heat chicken broth, water and corn to near boiling.

Add rice and chicken, stir, cover and simmer on low heat for 20 minutes.

Stir and season to taste with salt, curry, ginger, garlic or whatever.
